haha, but I will share the recipe with you!
I hardly have any time to bake a cake from scratch, but THIS I was able to do. This cake is semi-homemade. The cake itself is just a boxed cake mix (Betty Crocker – Triple Chocolate Fudge) & the frosting, Betty Crocker too (Whipped Milk Chocolate). The homemade part to this cake….the filling!
I found the original recipe here, but decided to leave out the Frangelico. I knew the girls would want to eat this cake, and the thought of putting alcohol (even though it would be cooked down) in the cake didn’t sit well with me. Also I couldn’t find hazelnut extract, so I left that out as well. But really, the presence of the fresh hazelnuts is all you need.
{ Steps }
ONE – In medium saucepan, melt butter on medium heat
TWO – Sprinkle flour & whisk until smooth
THREE – Reduce heat to medium low & add sugar and cream. Whisk constantly for about 7 minutes, or until mixture has thickened.
FOUR – Stir in hazelnuts (finely chopped), salt, and chocolate until the chocolate has melted.
FIVE – Transfer to a bowl and let the filling cool completely. Try not to eat it!
SIX – Once cool, add to cake. I added the filling then put the entire cake in the fridge to cool overnight, then frosted this bad boy in the morning.
{Tips}
Try to find hazelnuts that have been peeled, but if you can’t find any. Boil the hazelnuts for 2 min. with 2 tbsp of baking soda. In a bowl of water, slip the skins off the hazelnuts. (This will take some time) Dry the nuts, then roast them in the oven for 20 min. at 350 degrees, stirring occasionally. Once cool, finely chop.
If you were able to score some peeled hazelnuts, roast them in the oven for 15 minutes at 350 degrees, then finely chop once cool.
This filling was soo delicious, I had to slap my hand from eating it all. It’s THAT good!!
